Go-To Summer Salad Recipe
Jun 13, 2024We all need that go-to recipe for summer and this fresh, tasty salad is quick, easy and the perfect compliment to any summer meal!
Cucumber, Dill & Feta Salad (serves 4)
Ingredients:
- 1/4 cup Extra Virgin Olive Oil
- 1 1/3 tbsp White Wine Vinegar
- 1 tsp Oregano (dried)
- 2 heads Iceberg Lettuce (small, chopped) (sub other lettuce)
- 1 Cucumber (medium, sliced)
- 1/4 cup Fresh Dill (finely chopped)
- 1 cup Feta Cheese (crumbled)
- Sea Salt & Black Pepper (to taste)
Preparation:
- In a small bowl, whisk together the oil, vinegar, oregano, salt, and pepper.
- Add the lettuce, cucumber, dill, and feta to a bowl. Pour the dressing all over and toss.
- Divide into bowls or onto plates. Enjoy!
